Vineyard

La Colina is located on the western side of the Dundee Hills, and sits at 500-600 feet of elevation.  It was planted in 1999 by George Hillberry, who is one heck of a farmer.  The site is dry farmed and is live certified.  There are about 40 acres planted, all Pinot noir, save one acre that George grafted over to heritage chardonnay clones for us in the coldest pocket of the vineyard. Our block is situated on the top of a ridge that runs through the vineyard. It is Pommard clone. though it might be less famous than Abbey Ridge or Temperance Hill, we find the wines to be just as alluring, and more approachable in youth.

Tasting Notes

This 100% Pinot noir Blanc de noir has aromas of toasted almonds and warm baked apple. The palate features a distinct red raspberry inflection, providing an excellent structural weight and vibrant acidity that makes this sparkling wine versatile enough to stand up to richer, heavier dishes. The finish is savory and long, leaving a lingering impression of roasted nuts and crisp orchard fruit.

Food Pairing Suggestions

  • Rich Korean Comfort Food: Bossam (boiled pork belly wrap) served with salted shrimp sauce and radish salad, where the wine's acidity cuts through the fat while the raspberry notes complement the pork.

  • Earth & Game: Braised rabbit legs or a decadent wild mushroom risotto topped with shaved black truffles to pair with the toasted almond undertones.

  • Decadent Seafood: Pan-seared sea scallops in a rich hazelnut brown butter sauce to mirror the wine's baked apple and nutty complexity.

Varietals- 100% Pommard clone Pinot noir (Planted in 1999)

Harvest Date- 9/25/2022         Bottling date-8/10/2023‍ ‍Disgorgement Date- 5/15/2026

Vinification- Whole cluster pressed. Fermented in neutral 22L oak barrelswith native yeast. Malolactic completed naturally. bottled after 11 months on the fermentation lees.

Dosage- 2 g/L       ABV- 12.5%
